This Cheesy Zucchini Orzo Pasta Salad is easy and delicious. It's perfect for a quick summer dinner, and with all that zucchini you can count it as a healthy vegetable!

- 1 Tablespoon extra-virgin olive oil
- 1 medium zucchini chopped
- 1/2 teaspoon salt
- 2 cups cooked orzo pasta
- 1/2 cup shredded Parmesan cheese
Heat oil in a
large skillet.
Saute the zucchini and salt in the oil for 5-7 minutes, until the zucchini is tender.
Add orzo to the skillet and cook for 5 more minutes, stirring frequently, until the orzo is heated through.
Add the cheese, stir well, and keep on the heat until the cheese is melted.
Serve immediately.
