Chocolate Chip Oat Cookies

From "Mom Knows Best" by Gooseberry Patch.
Servings 3 -1/2 to 4 dozen cookies

Ingredients
  

  • 1 cup butter softened
  • 1 cup brown sugar packed
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1/4 cup hot water
  • 2 cups quick-cooking oats uncooked
  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 1/2 cup semi-sweet chocolate chips

Instructions
 

  • In a large bowl, cream together butter and brown sugar.
  • In a separate bowl, combine baking soda, vanilla, and hot water. Add to butter mixture.
  • Stir in oats, flour, and salt. Fold in chocolate chips.
  • Drop by tablespoonfuls onto lightly greased baking sheets.
  • Bake at 350 degrees for 10 minutes, until edges are just beginning to turn golden. Cool on wire racks.
