Garden Veggie Stew


  • 1 pound beef for stew
  • 1 onion chopped
  • 1 cup butternut squash chopped
  • 2 cups sweet corn kernels
  • 1 quart tomato juice
  • 1 quart green beans
  • 2 cups instant brown rice
  • Salt and pepper to taste


  • Cut beef into bite-sized pieces. Add beef, onion, butternut squash, sweet corn, and tomato juice to a slow-cooker. Mix well.
  • Cover and cook on high for 3-4 hours (or on low for 6-8 hours).
  • In the last hour of cooking, mix in green beans and brown rice.
