Quick and Easy Blackberry Cobbler

This Quick and Easy Blackberry Cobbler is a family-favorite recipe. We make it as soon as we can get fresh blackberries, and just can't get enough!

Ingredients
  

  • 4 cups blackberries
  • 2-1/2 cups sugar divided
  • 1-1/2 cup all purpose flour
  • 1/2 teaspoon salt
  • 1 egg
  • 2 Tablespoons vanilla
  • 3/4 cup butter melted

Instructions
 

  • Place the blackberries and 1 cup of the sugar in a large saucepan. Heat over medium heat, stirring occasionally, until berries are warmed through and sugar is dissolved. (about 5 minutes)
  • In an electric mixer, combine flour, 1-1/2 cups sugar, salt, egg, vanilla, and melted butter. Mix on low until combined.
  • Pour blackberry mixture into a 9"x9" pan.
  • Spoon batter mixture on top of berries.
  • Bake at 375 degrees for 50-60 minutes, until top is golden and topping is cooked through.
