Heat olive oil in a
large skillet.
If the beef roast is tied with butcher string, leave the string in place.
While oil is heating, generously sprinkle salt and pepper on all sides of roast.
Sear roast in hot oil, for 3 minutes on each side.
Add onion and carrots to slow cooker, place around roast.
Add peppercorns and garlic to slow cooker.
Crush Italian seasoning and add to the slow cooker. (Place 1 Tablespoon in the palm of one hand. Quickly rub hands together over slow cooker - seasoning will be crushed between your hands and fall into the slow cooker.)
Pour broth over roast.
Cover and cook on low for 6-8 hours, until fork tender.
Remove roast from slow cooker and let stand for 5 minutes.
If the roast is tied with butcher twine, remove twine.
Slice and serve.
