Ingredients

  • 1 Tablespoon extra-virgin olive oil
  • 3-4 pound beef rump roast or chuck roast
  • Salt & Pepper to taste
  • 2 onions quartered
  • 1 pound carrots about 4 large, peeled and cut into 3-inch chunks
  • 1 Tablespoon whole peppercorns
  • 3 cloves garlic minced
  • 2 TablespoonsItalian seasoning
  • 32- ounce box beef broth

Instructions

  • Heat olive oil in a large skillet.
  • If the beef roast is tied with butcher string, leave the string in place.
  • While oil is heating, generously sprinkle salt and pepper on all sides of roast.
  • Sear roast in hot oil, for 3 minutes on each side.
  • Place roast in a 6-quart slow cooker.
  • Add onion and carrots to slow cooker, place around roast.
  • Add peppercorns and garlic to slow cooker.
  • Crush Italian seasoning and add to the slow cooker. (Place 1 Tablespoon in the palm of one hand. Quickly rub hands together over slow cooker - seasoning will be crushed between your hands and fall into the slow cooker.)

  • Remove roast from slow cooker and let stand for 5 minutes.
  • If the roast is tied with butcher twine, remove twine.
  • Slice and serve.
