Garlic-Parmesan Mashed Potatoes

Ingredients
  

  • 2 pounds potatoes
  • 16 cups water
  • 3 Tablespoons salt I prefer kosher salt
  • 1/2 cup 1 stick butter
  • 4 ounces cream cheese (1/2 of an 8-ounce block
  • 1/2 to 1 cup milk
  • 1 teaspoon salt
  • 5-8 cloves garlic minced
  • 1-1/2 cups grated Parmesan cheese
  • Optional: dried parsley or chives for garnish

Instructions
 

  • Wash and peel potatoes. Chop potatoes into roughly equal-sized pieces.
  • Place potatoes, water, and 3 Tablespoons salt in a large pot. (A pot with a built-in strainer like this makes draining the potatoes easy.)
  • Cover and heat over high heat.
  • Brint water to a boil, then lower temperature to maintain a simmer.
  • Cook potatoes until they are soft, approximately 15-20 minutes.
  • Drain potatoes and transfer to the bowl of an electric mixer.
  • Add butter, cream cheese, 1/2 cup milk, salt, garlic, and Parmesan cheese.
  • Mix, starting on low speed and gradually working up to medium speed, until potatoes reach the desired consistency.
  • If you like mashed potatoes to be a little "thinner," add more milk.
  • If you like mashed potatoes to be a little "thicker," do not add any extra milk, and mix for less time.
  • Serve immediately, or transfer mashed potatoes to a 6-quart slow cooker.
  • Cover the slow cooker and turn to the warm or low setting to keep warm.
  • Top servings with dried parsley or chives if desired.
