Oven-Roasted Parsley Potatoes

- 1.5- pound bag Little Potato Company Boomer Gold potatoes
- 3 Tablespoons extra-virgin olive oil
- 1 teaspoon salt
- 3 Tablespoons parsley flakes
Place potatoes in a large bowl
Add olive oil, salt, and parsley to potatoes. Toss to coat.
Spread potatoes out on a lipped baking sheet
Bake at 400 degrees for 30 minutes, stirring once during cooking.
