Grilled Peach and Snap Pea Salad

Grab some fresh peaches and fire up your grill. This Grilled Peach Salad is perfect with any grilled meal, or by itself for an easy, delicious snack!

Ingredients

peaches

canola oil

snap peas
1/4-1/2
cup
Feta cheese
crumbled
1/4
cup
Strawberry Vinaigrette salad dressing
Instructions
Wash peaches, remove the stones, and cut into quarters.
Lightly
brush
the cut sides of the peaches with canola oil.
Place the peaches, cut side down, on indirect heat on a hot grill. (See this post for more tips on grilling peaches.)
Grill for 2-3 minutes, then turn the peaches so the other cut side is down. Grill for 2-3 minutes more, until peaches start to get soft.
Remove peaches from grill and set aside.
When peaches are cool enough to handle, slice each quarter into 2-3 pieces (roughly bite-size).
In a
medium bowl
, combine snap peas, sliced peaches, and salad dressing. Toss to mix.
Top with Feta cheese.
Serve while peaches are still warm, or refrigerate in an
air-tight container
and serve cold.
