Cheesy Broccoli with Bacon

Ingredients
  

  • 2- pound bag frozen broccoli florets thawed and drained
  • 2 Tablespoons butter
  • 2 Tablespoons all-purpose flour
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1-3/4 cups milk
  • 8 ounces Velveeta cheese cubed
  • 12 pieces bacon cooked crisp and crumbled
  • 4 Roma tomatoes chopped

Instructions
 

  • Place thawed, drained broccoli in a 9x13 pan.
  • Bake broccoli at 350 degrees for 20-25 minutes, until broccoli is heated through and the edges begin to turn golden-brown.
  • While the broccoli is cooking, make the cheese sauce.
  • In a medium saucepan, melt butter over low heat.
  • When butter is melted, add flour and pepper. Whisk briskly to form a paste.
  • Add milk to paste, whisking to combine.
  • Heat over low heat until milk is warm.
  • Add cubed cheese, about 1/3 at a time, and stir occasionally until cheese is melted.
  • When broccoli is cooked, add cheese sauce and bacon to broccoli and stir to mix.
  • Top broccoli with chopped tomatoes and serve.
