Quick and Easy Corn Bread

  • 1 egg lightly beaten
  • 1/2 cup milk
  • 1-15 oz can cream-style corn
  • 1 cup corn meal
  • 3/4 cup all purpose flour
  • 4 Tablespoons sugar
  • 2-1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 cup 1/2 stick butter, melted


  • In a small bowl, combine egg, milk, and corn.
  • In a large bowl, combine corn meal, flour, sugar, baking powder, and salt.
  • Pour liquid ingredients into dry ingredients and mix until just combined.
  • Melt butter in the microwave (use a microwave-safe container). Pour melted butter into batter and mix to combine.
  • Pour batter into a greased 9x9 pan. Bake at 400 degrees for 20-30 minutes, until the edges of the bread are golden brown and a knife inserted in the center of the bread comes out clean.
  • Allow to cool for 5-10 minutes. Slice and serve while still warm.
