Do you want a delicious salad to go with dinner? Try this Sweet & Tangy Apple-Carrot Salad instead of a regular leaf lettuce salad. Everyone will love it!

  • In a small bowl, soak the Craisins in 1/4 cup orange juice. Set aside while you prepare the rest of the ingredients.
  • As you cut the apples into matchsticks, toss the sliced apple pieces with 1/4 cup orange juice in a large bowl. (This will help keep the apples from browning.)
  • Add the sliced carrots, sunflower seeds, and pecans to the apples.
  • Drain the Craisins, reserving the orange juice. Add the Craisins to the apple mixture.
  • Whisk the reserved orange juice with the canola oil, and pour over the salad.
  • Toss to coat well.
  • Serve immediately, or cover and refrigerate.
