Make taco night and sloppy joe night the same night with these easy Slow Cooker Tex-Mex Sloppy Joes. Make them as spicy or as mild as your family likes!

  • In a large skillet, brown the ground beef and onion.
  • Transfer beef mixture to a 6-quart slow cooker.
  • Add refried beans, enchilada sauce, drained tomatoes, and taco seasoning to the beef mixture. Stir well.
  • If desired, add additional diced green chilis.
  • Cover and cook on low for 4-6 hours, until heated through.
  • For more spice, stir in sliced jalapenos.
  • Serve on hamburger buns, topped with shredded Cheddar cheese. Serve with diced green chilis or sliced jalapenos for toppings.
