  • 2 pounds link pork sausage cut into bite-size pieces
  • 1 onion chopped
  • 1 green or orange pepper chopped
  • 3 cloves garlic minced
  • 2 cans green beans
  • 1 Tablespoon dried parsley
  • 2 teaspoons dried oregano
  • 2 cups chicken broth
  • 1 46- ounce can tomato juice
  • 9- ounce package frozen cheese tortellini uncooked


  • In a large pan, saute sausage, onion, green (or orange) pepper, and garlic in a skillet over medium heat until browned; drain.
  • Combine sausage mixture, beans with liquid, and remaining ingredients except tortellini in a 6-quart slow cooker.
  • Cover and cook on low for 4-5 hours.
  • Stir in tortellini. Cover and cook for 30 more minutes, until heated through.
