Cook noodles according to package directions. When noodles are cooked, drain, toss with 2 Tablespoons of the olive oil, and set aside.
While the noodles are cooking, brown meatballs in 1 Tablespoon olive oil in a large skillet over medium heat (5-7 minutes). Remove meatballs from skillet and drain on paper towels.
In a small bowl, whisk together broth and flour. Pour the broth mixture into the skillet. Heat, stirring frequently with a whisk, until the gravy thickens, about 5 minutes.
Stir the sour cream into the gravy. Continue cooking until heated through, about 5 minutes.
Add meatballs to the sauce. Toss gently to coat. Continue cooking until meatballs are heated through.
To serve, spoon meatballs and gravy over noodles on individual plates.
