Combine all ingredients (except extra 1/4 cup sauce and 1/2 cup cheese) in a large bowl. Using your hands, mix well to combine ingredients.
Separate meat mixture into four roughly equal portions.
Shape each portion into a ball, then gently flatten into a loaf shape. Place meatloaves into individual wells of a mini loaf pan, or separated in a large baking pan (do not let meatloaves touch).
Bake, uncovered, at 350 degrees F for 30-40 minutes, or until internal temperature reaches 165 degrees F.
Remove from oven, top with extra sauce and cheese, and let sit for 5-10 minutes before serving.
