Zucchini Noodle Bake

Ingredients
  

  • 1 pound ground beef
  • 1 Tablespoon extra-virgin olive oil
  • 16- ounce jar pasta sauce
  • 16- ounce can diced tomatoes drained
  • 2 Tablespoons fresh oregano chopped (or 2 teaspoons dried)
  • 2 Tablespoons fresh basil chopped (or 2 teaspoons dried)
  • 2 Tablespoons fresh parsley chopped (or 2 teaspoons dried)
  • 4 cloves garlic minced
  • 2 medium zucchini
  • 2 cups mozzarella cheese
  • Salt & pepper to taste

Instructions
 

  • Brown ground beef over medium heat in a large saucepan. Drain and return to pan.
  • Add olive oil, pasta sauce, tomatoes, herbs, and garlic to meat in the pan. Cook over medium heat, stirring frequently, until sauce thickens to desired consistency (about 10 minutes).
  • Using a spiralizer attachment on an electric mixer, cut zucchini into spiral noodles. Place spiralized zucchini noodles in a 9-inch deep dish pie pan (or a 9"x9" baking pan). Add salt and pepper, if desired.
  • Top zucchini noodles with meat sauce. Top with cheese.
  • Bake, uncovered, at 350 degrees for 25-30 minutes until hot and bubbly.
