Green beans are a big favorite around here. John, Little Doc, and I all love them. But just eating green beans cooked with some butter and sprinkled with seasoned salt gets a little boring. This recipe for Country Green Beans will spice things up a little bit… and you can use up some of your leftover ham and chicken broth!

You can use fresh green beans or frozen green beans in this recipe. If you’re using fresh green beans, just wash them, trim the ends, and break them into bite-sized pieces. If you’re using frozen green beans, just toss them in your saucepan. (Yep, while they are still frozen!)
The original recipe calls for some chopped onion. Would you believe it… I didn’t have any onion in my pantry or chopped in my freezer! I did have some Tastefully Simple Onion Onion seasoning in my spice rack, so I used 2 Tablespoons of that instead. The cap of the Onion Onion bottle holds 2 Tablespoons, so it’s super easy to measure. (And you don’t have anything extra to wash!) (Click here to get to the Tastefully Simple website, then search “onion onion” to find the seasoning I used.) You can use 1/4 cup chopped fresh onion, or 2 Tablespoons of minced onion instead.
You do need a little bit of chicken broth for this recipe, but only 1/4 cup. If you have some chicken broth stashed away in your freezer, this is the perfect time to break out a little bit! If you’ll have lots leftover, say from opening a big 32-ounce box of chicken broth, then check out this post and freeze the rest to use later.

Country Green Beans
Ingredients
- 1/4 cup 1/2 stick butter, sliced
- 1/4 cup chicken broth
- 1 pound green beans frozen, or fresh and trimmed
- 2 Tablespoons minced onion or 1/4 cup fresh onion, chopped fine
- 1/4 cup cooked ham chopped
- 1 clove garlic minced
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
Instructions
- If using fresh green beans, trim ends and break into bite-sized pieces.
- Combine all ingredients in a saucepan. Cover, and bring to a boil over medium-low heat.
- Simmer, covered, for 15-20 minutes or until green beans are tender.
