Slow Cooker Brown Sugar Oatmeal

Slow Cooker Brown Sugar Oatmeal

I love a hot breakfast in the morning. But life with a busy pre-schooler doesn’t always make that easy. Cream of wheat and oatmeal are some of my favorites, but I often don’t have the time to hang out by the stove while they cook. So I love using my slow cooker to make steel cut oats overnight!

This recipe for Brown Sugar Oatmeal is in “Slow Cooking All Year ‘Round” by Gooseberry Patch. I have had this book since it first came out, and I still love it!

When you’re doing oatmeal in your slow cooker, it is very important to use steel cut oats. Bob’s Red Mill Steel Cut Oats are my favorite. Quaker also has steel cut oats, and those are sometimes easier to find. Just be sure you don’t get the “quick cooking” steel cut oats!

If you use quick-cooking oats, or even old-fashioned oats in your slow cooker overnight, you’re going to have a mushy mess on your hands in the morning.

One more awesome tip to making oatmeal in your slow cooker. Mix up your oatmeal in a glass bowl (or other heat-safe bowl). I use the largest bowl from this set – it fits perfectly inside my 6-quart Crock-Pot. Put the oatmeal in the bowl inside your slow cooker. Then fill the crock with water (inside the crock, outside the oatmeal bowl) until the water level is about halfway up the side of the oatmeal bowl. It takes about 6 cups of water in my Crock-Pot.

Then put the cover on, turn it on low, and go to bed!

Using the “bowl inside a bowl” trick lets your oatmeal cook for a little longer without burning. And nobody likes burnt oatmeal!

Ingredients
  

  • 1 cup steel cut oats uncooked
  • 4-1/2 cups milk
  • 1/2 cup brown sugar packed
  • 2 Tablespoons vanilla

Instructions
 

  • Combine oats, milk, brown sugar, and vanilla in a large glass bowl (I use the largest bowl from this set). Stir well.
  • Place bowl inside a 6-quart slow cooker.
  • Pour water into the slow cooker crock, outside the oatmeal bowl, until the water level is about halfway up the side of the oatmeal bowl.
  • Cover and cook on low for 7-8 hours.
  • Serve immediately.
